Easy Bowl Recipe

Looking for a quick and easy meal?  Try this one out – it's delicious and versatile and you can use whatever you have in either the refrigerator or pantry.  You can add as much or as little of any ingredient to the bowl.

Pick and choose from this list, or feel free to add something else you have already that sounds good.

  • ½ c - 1c brown rice or quinoa (hot or cold)
  • ½ can corn (rinse well), frozen corn (thawed) or corn from 2 medium corn cobs
  • ½ can black beans or whatever beans you have in the pantry (rinse well)
  • Cucumbers, chopped
  • Tomatoes, chopped
  • Olives – canned or refrigerated – black or green or both
  • Kale – massage the leaves and cut into pieces
  • Avacado slices
  • Salt/pepper to season
  • Mix everything together
  • For added protein, cut up chicken, lean beef, shrimp or some chickpeas

You can use any dressing that you have.  If you’d like to make your own try this version of

Green Goddess Dressing

(make ahead of time to keep in refrigerator):

  • Handful of chopped cilantro
  • Handful of chopped parsley
  • 3 Tb Extra Virgin Olive Oil
  • Small lemon, juiced
  • Salt/pepper to season
  • 1c fat free plain Greek yogurt or 1c blended cottage cheese (or try 1/2c of each)
  • 3 cloves of garlic (minced)

Blend all ingredients well and add to the bowl and enjoy!
